so I'm glad I stuck to my guns. Splitting four pounds of red
meat in such a short time was quite extreme, but that shows how much we enjoyed
it. I'll make another batch after we've had a couple of weeks of digestion. This
will probably be larger, and I will preserve some of it, either by freezing or
by canning if I can finally make good on my overdue by over a decade plan to get
started with that. I have plans to further integrate some of the old recipe into
the new one, so I'll hold off on writing up exactly what I'm doing until I'm
satisfied that I'm done tinkering.
