We had a pleasant Labor Day weekend at the Blue Tower, though the shock that September is already upon us is still reverberating. The rib dilemma I described turned out just okay... They could have used more time in the smoker for better tenderness, but they had good flavor, so next time they will be better. I have another rack of spare ribs in the fridge, so I'll try again soon and see what sort of improvement another hour or so of cooking helps.
