Thanks Dapperdanman for the link to the America’s Test Kitchen video on the topic of slow-cooked ribs, which shows how to start them on the grill and finish them in the oven, I think I'll give that a try as a starting point to learn a proper technique for this. I'm also intrigued by their pork chop recipe, and also picked up a quick education on the four different types of pork chops (who knew?). The whole clip is worth the price of admission (being free, that doesn't say much, but you know what I mean) just for the tip about slicing the fat at the edge of a chop to avoid "cupping." Good stuff.
