Out of the Blue

Secret to stronger pour-over coffee with no extra beans unlocked by scientists - The Guardian. Thanks Max and Neutronbeam. This makes me wonder if it relates to how my coffee comes out too strong when I use the recommended quantity of beans. Everything guideline I find calls for between a 14:1 and 20:1 ratio of water to coffee. But what landed on is 50 grams of coffee for 1.2 liters of water, which is 24:1. And it comes out quite strong, to boot. My grinder is on the coarsest setting, so perhaps my pour-over technique is partly to blame? After all, I am pouring from my soaring height of six feet tall (I'm actually 5'10", but a while back a friend warned me that men are generally dishonest about their heights, so everyone assumes you're cheating a couple of inches). I don't know. I'm still puzzling over this, but in the end, I guess it doesn't matter how far off we are from recommended guidelines as long as we're enjoying our coffee.

Starbucks coffee IS burnt. They say it's 'strong' but I know the difference. I like strong coffee. I can also easily disprove this because I have used Starbucks Pike Place beans (same as their regular coffee they brew in store), and even they're K-Cups at home, and they taste perfectly fine.

It's burnt.

My wife goes a bit overboard for her brews for the exact same reason. I started drinking coffee way too young so I liked it any which way even before I worked a night shift at Denny's. A very loosely-run place that was, many interesting nights and characters.

And we of course put beans in our chili. Even when it isn't vegetarian chili, I am struggling to imagine what it'd be without them. Are people eating boring manwich (was that it?) sauced meat and calling it chili?

Same. I just drink it black. If I can’t enjoy it that way what’s the point of adding junk like sugar? Not into the burnt Starbucks flavor either but that’s their thing. I go for the small coffee chains when I’m out.

Blue, my guess is that you enjoy a dark roast. That's why the ratios don't make sense.
Prickly baristas will only drink finicky, Light roasts for exotic flavours. Roast must be less than 4 weeks old.
Precise brewing techniques are matched with expensive tools and equipment, pH and mineral balanced water, elaborate note taking,
And a coffee tasters flavor wheel is always on hand.

+80% of coffee drinkers don't have a clue. I was there.
It's fine. In fact, maintain that ignorance. It's way cheaper than falling into a barista rabbit hole.
Guzzle back generic coffee, just like millions guzzle back Budweiser or Miller Light and think they are getting the "beer" experience.

One of these days, I will go back to my press because it does taste better, but my co-workers bought me one of those Nespresso machines last year, and I have been living the life of the environmentally irresponsible ever since. Holy crap does it make a decent cup of coffee compared to any Keurig or Ninja I have ever used.

I know this makes me a heretic in some folk minds, but I add cream to my coffee despite gunning hard for "as dark as possible" when I brew. (I put beans in my chili too BoP *gasp*) I like the bitterness of coffee to get cut by the cream, I don't like the coffee taste to get lost in the cream...if that makes any sense. I started using cream in my coffee when I was only 19 because one of my 3 jobs at the time was the late-night shift in a Denny's. Coffee sitting on the warmer too long is burnt, and cream helps with the burned taste when you don't have time to brew another carafe. My family was tea people, so I wasn't exposed to anything besides Folgers instant coffee until I moved overseas. Got my first press while in Scandinavia. In the 90s, that place was espresso crazy like the US became in the 2000s. Maybe it was always that way, but I wouldn't know. My preference has been to use a course grind with my press and very hot water, followed by a 5-6 minute steep. This gives me a very dark and flavorful cup of coffee that I then add a bit of cream to. Not a lot, I am not a café au lait or café misto person normally. Latte's are great and all, but they need to be like 3-4 shots per 16oz or its too much milk and not enough coffee for me.
