While I can see the superficial similarities, I wouldn't say that they are comparable. I didn't care for The Sopranos because I found the subject uninteresting. There's been a bunch of entertainment properties made about the Mafia (be it Sicilian or American). They all tell the same story. The Penguin isn't about the Mafia. Its story includes the Mafia, certainly, but it isn't about them.

The show being set in the DC Universe actually helps here because while it is familiar ground, Gotham, it isn't laden with a bunch of superhero crap. There are no cardboard cutout villains to do away with every episode. Colin Farrell actually nails his role and it's hard to see him, the person, in the role. You don't see it and think "That's Colin Farrell." You see it and think "That's Oz Cobb." But what really sells the show, for me, is Victor played by Rhenzy Feliz. Victor is just as much as a pillar of the show as is Oz. Because without Victor, Oz would have been dead in three episodes.

It's just a great show and a completely unexpected one. At least for me. I never thought Farrell would have topped his role in In Bruges but he has.

Everyone I know that's watched it loves it. Most don't even know the Penguin is Colin Farrell. They're all, 'Holy shit! That's Colin Farrell?!' If he doesn't get an Emmy for best actor - and this series doesn't sweep it - they may as well just not have the ceremony. It's way the fuck better than The Sopranos because A) the acting is way the fuck better all around B) they show them as the shitheels they are, they're not glorifying or romanticizing them.

Thanks for digging that up. That's a lot more detailed then what I was using. According to that one, 155 only needs 1.3 minutes, so if you're resting your bird even the tiniest amount of time, it's going to be safe.

Not Poultry.

*sigh* There's no reason to cook your Turkey to 165 degrees, unless you like it dry. Meat cooked to 145 degrees and held there for at least 15 seconds is just as safe as that cooked to 165, but will be much jucier. I personally try to target 155 for the breast meat, but pretty much always miss due to carry-over.

This year I'm just going to try to sous vide the thing in sections, and not worry about it.
