Out of the Blue

Happy Easter to all who are celebrating, and happy Sunday to those who are not. This holiday has an additional significance around here. Though it's been spring for over a week, when we moved a bit further north a few years ago we were warned that we should expect late winter frosts, and to never do outdoor planting until after Easter. Sure enough, we had frost last week, but the low in the forecast this week is 33°F for three nights in a row. Now that is one shockingly precise rule-of-thumb.

You should definitely watch the new Steve Martin documentary, if you liked him.
He was the first comedian who could play stadiums, outdrawing Fleetwood Mac in the same venues.

Makes sense on the jalapenos and explains why I have lost any interest in store bought varieties. They're way too fleshy, more so than they ever used to be, and the heat, what little of it there was to begin with, has all but disappeared. Might as well eat a gods forsaken bell "pepper" now. I've noted they snap less and bend more, which makes them a little rubbery feeling.

I have been growing Costeno Amarillo peppers for a long while, harvesting them before they turn yellow. They've got a reasonable level of heat and have a great flavor to them. I'll process them (wash, cut lengthwise, and deseed) then pop them in the dehydrator. Once dried, I'll toss them in to the mortar and pestle and grind them to a really fine powder to sprinkle in to chili (without beans, naturally), stews, and even gravies when I want just a little kick.

The article mentioned tomatoes as well and that is important because it is a bellweather of what is to come for commercially produced vegetables. Most people don't know that the interior of a tomato should not be watery and the vast majority of store bought ones are. They should be gelatinous, kind of like Jello You should be able to cut through them cleanly without any oozing, spritzing, or squirting. Naturally, I grow heirloom varieties of those as well. San Marzanos are my main go-to because they are low acid. Then come the Bonny Best variety. The San Marzanos are great for everyday cooking and the Bonny Bests are good for cooking but most importantly canning.

Unfortunately, I think a lot of people are going to be settling for crap produce overall unless they start to grow their own.

It's been spring since March 1st. OK. Technically this is also "over a week" .

Also, Happy Eggz and Bunny Day to y'all. Don't overdo the eggs. Bad for cholesterine. Can't overdo the bunnies though. Cardio is always a good idea to stay in shape!

I find half the time they are as mild as tomatoes (some restaurants), but others they are face-burning.

It's not like I eat a ton of them regularly myself so I likely wouldn't notice the difference anyway. And maybe they're not getting less hot but just people eating more hotter varieties of pepper more regularly. I see ghost and scotch varieties advertised in so many things now. I can't bother with hot peppers anyway. That's what hot sauce is for. I have a 1/2 dozen, varying in heat, and I definitely want something that actually tastes good and doesn't just burn my mouth. My go to is Louisiana Hot Sauce - perfect balance of taste and heat for me. Then there's Franks, Cholula , Tabasco - red and green, love the green on scrambled eggs! I wish I could find the other blends of Louisiana Hot Sauce, their green and garlic sauces. I've always liked Chinese chili garlic sauces. Anyone use those taco sauces?

After watching The Way of the Hot and Spicy TV show, I decided to give Tabasco sauce a try at home (it was featured in the show, where a character will pull it out of their bag to add to food at the restaurant), and it's very good. Flavourful, and you can add more for more heat if needed. It tastes better than sriracha IMO.

It even works great on popcorn.

Speaking of TV shows there's a great new documentary series on Prime about Star Trek called The Center Seat, narrated by Gates McFadden. It's hard to believe that Lucille Ball was the driving force to get the show made and on the air. A lot of interesting Trek history. A must watch for Star Trek fans.

Not quite new, released Nov 2021 - Mar 2022. But it is worth watching for the most part. I actually knew about Lucille Ball's involvement, I had looked up Desilu quite some time ago...

Hard to say - I have a notoriously low tolerance for spicy hot things. My son would always tease me about having no idea how to get to "flavor town". 🙂

For me Sriracha is fine as an ingredient, not a topping... MrsBlue made some tasty Sriracha chicken the other day. For red sauce I greatly prefer Frank's to Tabasco for its extra acidity, but I'm a Yankee, so there's that. My real jam, however, is green sauce. Cholula makes an excellent variety that I just adore.
