Out of the Blue

Well, it's the end of an era at the BlueTower, as we dragged the grill off to the dump yesterday. It's only three years old, but as I've made clear over the years, I do a LOT of grilling. These things tend to last at least five years, and we could have gotten more life out of it, but it was clearly already too shot to pass off on someone else. This brings me to the decision of how to proceed. We've cut down on our meat consumption, but we still do it on occasion. At this point my thinking is to just go full sous vide. This can be used to bring meat to the almost perfect temperature and then sear it to finish. The sear can be done with a propane torch, which is something I can surely get away with on the deck. I'm still considering my options, but this seems like my best bet.

Personally, I don't like the taste of torch searing (but I only used a butane torch). I used to do a lot of sous vide and I prefer the seared taste you get from a cast iron pan over an electric stove. A touch of corn syrup or even sugar sprinkled on a (dried with a paper towel) sous vide steak can give you an interesting sear too.

With that said, I haven't tried the propane torch with a Searzall attachment. Supposedly this is as good as BBQ. Guess checking the reviews is a good idea: https://www.amazon.com/SEARZALL-Stainless-Steel-Culinary-Restaurants/dp/B00L2P0KNO

After several propane BBQ units rusted out I went with the Green Egg and I couldn't be happier. You would get by with the small one. You won't be replacing that in your lifetime.

Honestly, most of the time I just put the meat after sous vide on a pan and rack and sit it on the open stove door and torch it. If you will not be grilling much, another option is get a decent but small camping stove, and just create a little shelf that sits over the deck rail for it. You can bring it in when it cools down, potentially prolonging its life, and its not expensive. More than large enough for quick grilled burgers or bratwurst or hotdogs, etc,. for two.

While sous vide is nice, I don’t know that it is really a substitute for the proper Maillard reaction you get from grilling. With thicker cuts of steak you can absolutely pull that off with a torch, but it gets a bit dicier with chicken and fish.

I personally have started to prefer a charcoal smoker / grill hybrid unit. Though I don’t plan on tossing my propane grill anytime soon.

One of the many ways to know your sleep cycle is busted:

You wake up in the early morning and realize you are not going to be able to fall asleep again, so you get up. You then complete 4.5 loads of laundry before exiting the house at 7:00 am to get an iced mocha. (the coffee shop opens at 7)
