Out of the Blue [May 14, 2022, 12:18 pm ET] – Share – Viewing Comments
I recently picked up a simple kitchen gadget that makes me very happy. It's a
silicone egg ring. Accompanying purchases were English muffins and some beyond
breakfast sausage patties for some home Sausage McMuffin knockoffs. A lot of
times recreating a fast food recipe at home involves trying to elevate things.
If I was trying to make a Big Mac at home I certainly wouldn't be striving for
well-done 1/4" thick patties. But in this case being able to reproduce a Sausage
McMuffin that tastes exactly right seems like a triumph. My one variant is using
slices of a gruyere/cheddar combo that melts beautifully without subjecting
anyone to American cheese. This cheese is definitely going to make for some
excellent cheeseburgers too. Though in that case if they turn out like authentic
McDonalds I'll end up throwing away my grill.

I was just saying to MrsBlue that I should get more so that I could turn these out four or six at a time for guest breakfasts/brunches. If I shop for more we can revisit this.

it's my birfday soon, and i just bought an $80 wagyu steak for myself. if anybody has any recommendations how to cook it i'm all ears. 12 oz NY strip.
Reverse sear. Put it in the oven at like 200 - 250 until it's about 10-15 degrees below your target temp. Then finish on a super-hot pan in a high heat oil (clarified butter or ghee is a steakhouse classic, but avocado oil, grapeseed, sunflower are all good high heat ones) for 30 seconds each side. Look up reverse sear for more tips, but you'll get a perfect interior with an almost non existent grey band on the steak if done right.

Due to legal matters I have to live within 1 block of my town's fire department when cooking. This also includes provisions prohibiting me from using "self-made" cooking utensils.
And I won't even go into the problem with scissors.
