From Software's Souls-borne-like games are a genre upon themselves and some people will either love these type of games and others will bounce off of it. It's no big deal if it's not for everyone but for those who really love these types of games, Elden Ring is probably their most anticipated game of the year.
For instance, I've never understood the appeal of racing games. I find driving an annoying daily process since I have to constantly deal with traffic or morons who barely know how to drive or somehow think they're special enough to break the rules of the road. So playing a game where you have to drive repetitively in a big oval on a track is not appealing to me whatsoever. That doesn't mean that I don't understand why some of my friends were hyped up for the newest Forza or why they'd spend thousands of dollars on driving peripherals to virtually drive an overly-expensive car they could never afford in real life and not have to worry about obeying speed laws.
The same goes for when a bunch of Blues New'sers in here were going gaga over the newest Truck Simulator game. That sounded like the most boring game that I could ever think of and it baffles the hell out of me that anyone would want to play a game like that. But hey, it got good reviews and a bunch of you really like the series. Good on you and have the kind of fun that you want.
That's why people have different tastes, opinions and preferences when it comes to games they like to play. Some people just want to chill and relax when they're playing games and other want to challenge themselves with a game that does very little hand-holding. I was very hesitant on delving into Dark Souls 1 but little by little, death by death, I grew to love the series and have had some of my best experiences in gaming from playing these types of games. So just because you don't like the series doesn't mean that they're bad games or that those who like the series are blind cultists. There's a reason why they're so beloved because they fulfill a niche that very few other games can really compare to.
