Meh, retcons happen all the time in comics, and even the movies. It'd be easy as hell to just continue the story after DS2, or just kluge together a post DS3 story, if they really wanted to.
Publishers would rather just remake old games though, less work having writers try to produce something decent, and apparently everybody is overflowing with artists/3d modelers now.
