Out of the Blue

Dinner last night turned out perfectly, thanks to differing perspectives. MrsBlue thought the shell steak was a little tough (I didn't agree), so I got most of that. I thought the salmon was a little fishy, so she got most of that. And we both thought the risotto came out great. It turned out to be a lot easier to make than I imagined, but I was still very proud of myself to have nailed it on my first try.

With the frequency roads need to be repaved in my neck of the woods they would need to be built in a way which would allow repaving without disturbing the panels.

I think it's just another name for a strip steak.

I've never heard that term down my way and I spend a lot of time grilling/smoking various meats.

Just learn how to make congee and then you don't have to stand there and stir for 20+ minutes. Just cover the pot and let it happen

Yeah, I guess I just confused the time consuming nature of it with difficulty. It was actually pretty simple.

Whenever I make risotto, i make it as a main dish (with mushrooms), and then I can serve it with something simple like grilled chicken or sausage (or I would if I still ate meat).

MrsBlue definitely wants me to make it again, so I told her next time it would be along with something I could cook in the oven and it would be done when it comes out. Last night I needed to grill the steak and fish after. This was quite quick, but the risotto still had time to lose that pliable but not too loose quality it had fresh off the stove.

Risotto was never considered "hard" to make, just ridiculously time consuming. I think most people cheat their way through it by adding cream to rice to give it the right consistency, rather than sitting their stirring it with a spoon for 45+ minutes.

It's basically rice cooked in a saute pan by repeatedly adding stock in small quantities until it's absorbed. It's made a with one of several very starchy rice varieties, and the continual stirring creates a creamy texture even though there's no milk or cream used.

But you're right. If you don't like rice, it's probably not for you.
