Not having seen any of the Mandalorian yet, I'm curious if her character's absence is going to cause any story issues?
It won't change a thing.
They could replace her and have someone else play the part and no one would care.
They don't even need someone else to play the part. The character literally doesn't bring anything to the story. Ironically other than being shoe-horned in as a cool, asskicking, non-conforming overweight "strong" female side-kick. She is literally a female Bud Spencer. If the show was a buddy adventure, sure. It's not however, and she only appeared in a few episodes. Too many shows do this, bring in characters so they can claim to be "diverse" but literally shoe-horn them in without thought about how they are written, what their backstory is and how they can contribute to the story. Her character was actually better than most in this regard, because there was a hint of a cool backstory but was used so sparingly that her arc was never even developed.
