Out of the Blue

We had a very successful cookout yesterday. Everything turned out well, even the pile of marinated chicken breasts MrsBlue sprang on me at the last minute. These can be tricky, and I've experimented with varying degrees of success over the years, but I tried something new this time that worked well. I recently saw a tip about cooking breasts on the warming rack above the grill for an even more indirect heat. I thought this was a Mark Bittman tip, perhaps from his new book, but in searching online I can't relocate what I read about this anywhere. I reverse-seared them by getting them near the proper temperature on the warming rack and then getting a little sear from the grill to finish them. Easy peasy, and they came out perfectly done, and juicy throughout. I'm sorry I can't find the article about this trick to credit its originator, but it's that simple, so there's not much more to learn about it.

Farewell Alan Bean. It saddens me to know that in a few years there won't be anyone still alive that has set foot on the moon.
