All the GOG versions ran just fine on Windows 7, although I think that was mostly just because the first two ran in DOSbox.
The original Fallout games are Windows native and needed no modification to run in newer Windows versions. Although with Fallout 2, when GOG updated to the version 2 installer, they included a mod that caused some problems for me and lots of other users. Removing the mod and running it unmoded worked fine or installing the high-res patch also worked. I kept my original installer from way back when I bought it in 2008 though.
