Out of the Blue

Made omelets with my new/old pan this morning, and couldn't be happier with the outcome. I've tried to determine how difficult or costly it might be to pick up an older Le Creuset pan like this, and have not been able to find a single reference to the model I have, which is completely cast iron with no enamel coating inside or out. I can find eBay listings for similar pans with enamel, but my inability to find any references to such a plain pan from them makes me suspect it may be considerably older than the 30-40 years old that I've been estimating. I've grown used to being able to answer obscure questions like this through the internet, so it's a little frustrating how little I'm finding about this so far.

Sounds like it may not be properly seasoned. My Lodge pans are very low maintenance.

You can Google about seasoning, but it basically is just cleaning the pan really well, oiling it, and baking it at about 400 for an hour or more.

Thanks! The cooking side isn't a problem, it's the bottom of it that I need to oil now and then. I guess some additional seasoning is in order.

The problem is that all Le Creuset pans from the beginning were enameled. You can even check their site:

Either your pan has had the enamel wear off, is one of the black enamel ones, or it is a knockoff. You may want to get it looked at, because every piece of evidence I can find says they never made a pan like it.

I have a lodge 13 inch and a smaller one. The 13 is hefty for sure, and hard to hold with one hand. Don't use them too often but they're good for some things.

Neil Armstrong. Great scientist and explorer who helped to take man into space. Snooki...complete waste of space.

Going to have to sit down and watch The Right Stuff in his honour. It's such a brilliant piece of cinema anyway.
