I really wish there were less shouts to find, or that you didn't have to spend so many hours trawling through dungeons to get to them. I played a very focused mage character in my first play-through and would see so much new content playing a brawler, but the thought of going through all of those dungeons again is going to put me off for at least a few months.

There are quite a few you can't refuse, from the point of view of having the refusal remove the quest from your quest log. While it's possible to "fail" some quests to remove them from the list, there are more that you don't even have that option with. Fairly annoying if you're a completist role-player.
NPC: "You're an assassin!"
Me: You must have me confused with someone else.
NPC: "No, I don't. Please kill an old biddy I don't like!"
Yeah, that was pretty frustrating.
