We approve. While I'm sure it's not what happened, I get this mental image of the character of Mr Bean, stepping from the car, looking at it, frowning and shaking his head, and then walking off in a random direction. And then locking his keys in the car and making that "mmmm" sound in a really low tone. I have his whole collection. It is the funniest stuff I have ever seen. THis is Faulty Towers are true gems. |

I find turkey to be one of the harder things to get right, so last year I cooked a marinaded pork loin, roast potatoes, and leeks in a white wine sauce. And Sancerre (or <insert white burgundy here>). Yum. |

I was watching Alton Brown and he did a really cool roasted turkey. So major props to him for making me want to switch it a bit. You can brine the bird, as he did, but I didn't find it necessary. Thought I'd share this since there are other foodies here that enjoy good turkey. I was a professional cook for 15yrs.
Turkey, completely thawed or fresh Carrots, onions, celery, apples Thick cut bacon Olive oil Smoked salt Cracked pepper Sage Chicken or Turkey stock.
Preheat oven to 500F/260C
Wash the turkey, inside and out. Pat dry.
I like to put the bird on a stand in the roasting pan, to keep it out of the juices, and place the carrots, onions and celery (Large chunks of veg) around the stand. You can also just put the bird on the chopped veg if you want.
Put about 3 cups of stock into the roasting pan. I recommend Better Than Bouillon concentrated paste.
Drizzle the bird with olive oil and massage the bird so it's totally covered. Sprinkle smoked salt, cracked pepper and sage on the skin. Cover the breast and thigh/legs in bacon slices. Stuff the cavity with apples.
Put the bird in the oven, uncovered, for the 1st 30 mins. Drop the temp to 250F/120C for the remainder of the cooking time and cover the bird until it's cooked (internal temp of 161F/71C).
Let the bird rest, covered in tinfoil shiny side down, for 30 mins or so.
The drippings that are left are mmm mmm good! |

Never leave the grill open when grilling. You only open it when you flip.... Depends on what you're doing. Lid on if you want the grill to be an oven (whole turkey/chicken, pork shoulder etc or if you're smoking anything), lid off if you're just grilling (steaks, chicken/turkey pieces, hamburgers etc). For grilling you want just the direct heat below, not completely surrounded like with lid on.
Edit: Don't forget to use a wet pan if you're using the lid on method, otherwise you'll end up with dry meat.

I usually do it on the grill, I was talking about the thermometer on the grill. I still place the chicken on a pan so I don't have to worry about cleanup. |

Had an awesome moment (and a great time) at the dog park today. Watched 4 A-10s take off from about 200 yards away. Was eerily quiet when I got there, was wondering why nothing was taking off (the dog park abuts the Minneapolis Airport on the north side) and thought nothing of it as I unloaded the pups. Then heard the unmistakable noise from the Warthog, turned around just in time to see the first one take off super low, go over the trees at the park and bank super hard and gone. Then got to watch 3 more just behind it.
Had never seen them fly that close before, usually always pretty high up when I see them around here. Such beautiful aircraft. |

Last Thanksgiving, I give my bro's wife the ATK recipe for perfect roast turkey. All you have to do is brine it, air dry it, roast it. And of course she fucks up the brine which is just salt and sugar and water. She skips the sugar and doubles up on the salt instead. Turkey comes out of the oven looking just super. Everyone take a bite and starts looking around at each other and coughing from all the salt. She tries to blame me for giving here the recipe. I then ask about the ratio of salt to sugar she used. 'Sugar? What sugar?' she asks. Well, anyway, the vegetables were still good. |
