then don't play co-op - the rest of us will still enjoy it

Yeah, that's the last thing I'd want to experience in an ME game, particularly in the hubs where I like to go around and explore.

System Shock 2 had internet campaign coop in 1999 and it STILL works today. AND you can save your games and come back later.
Why is this so hard to do today? Most people love campaign coop, the most recent is Shogun Total War 2. While it had a rocky start, they fixed it in a few weeks and now it is perfect!

I love coop, but if it's just going to be 4-player survivor mode with Shephard, Garret, and a Blue Alien with a cute ass against endless waves of Geth robots, I'd say don't bother.
Aliens vs. Predator (2010) has a survival coop mode, but I just kept thinking how much moe fun the campaigns would have been in coop. It certainly would have fit the canon.

While I agree the story and the stuff with your NPC sidekicks should be SP, I would think they could implement coop MP for the non-story exploration side.
Things like you scan a planet, find a beacon, go down and fight some husks or whatever by a wreck, find out it came from another planet which has ceased comms, so you go there to eradicate the base location. Both MEs had several missions like that which added nothing to the story and were just ways to earn resources and XP. There's no reason you couldn't do that MP.

I have no desire to do anything multiplayer with the Mass Effect universe. People always tell me how great it would be with the potential for both ship to ship combat and ground pounding, large galaxies and exploration. Maybe they're right about the potential but I have no confidence in Bioware to do it after seeing what they've done with TOR.
