Minecrafts appeal is not in the graphics (although some people may say they prefer it) but in the completely destructible, endlessly, randomly generated, world-that you (and friends) can also build in.
Granted, I would love a version of Minecraft that uses all of the power of today's graphics cards, but that would take the resources of a dedicated studio-and it's pretty obvious that the general gaming industry would rather fund another call of duty than risk something new.
