Out of the Blue

We already considered ourselves lucky to have a very good southeastern-style BBQ a couple of minutes away, especially since our village is so small there are not that many restaurants, and some more common food varieties are not represented at all. But we didn't know just how BBQ-blessed we really are until yesterday when we hit the jackpot in our visit to the RoundUp Smoked BBQ Restaurant, which is all of 20 minutes away. As they note, this places it about an hour north of Manhattan, but it also seems to be some sort of portal directly into the heart of Texas, with some of the finest wood-smoked BBQ I've ever had, regardless of relationship to the Mason-Dixon Line. We had beef ribs, chicken, and some incredible brisket, as well as smoked chicken wings that were mind-boggling. As for authentic atmosphere, the dining area had picnic tables and beer in an ice chest in the middle of the room, and your food is served in Styrofoam trays from a trailer through a window. We'll nose around for the back story at some future visit, but we presume this all came straight from Texas, as the owner's accent and hospitality were just as authentic as the food. It's not readily apparent what would motivate someone to bring such a bounty to a bunch of Yankees, but I'm not looking a gift steer in the mouth.

Blue you're making me hungry. Even living in Texas I have a hard time finding Texas BBQ that suits my taste. Mostly because I prefer lean beef, and 90% of the BBQ places use beef that seems to be 80% fat 10% gristle and 10% meat. I love sliced beef sandwiches, where the meat has a nice thick smoke ring and a good tangy BBQ sauce, mmm.

Blue - if you're ever in the Austin area, outside of town about 20 minutes is the Salt Lick. It's nirvana for carnivores. Check it out if you ever get the chance.

Remember to bring cash - no plastic accepted. It's B.Y.O.B.; too, which sounds like a hassle but is actually pretty fun. Some folks bring some awfully large coolers with them.

I love good smoked BBQ myself. My father has been cooking outdoors since I was a kid, so I grew up on smoked meats, deep fried turkey, dutch oven cooking, and regular charcoal grilling. My parents recently bought me an electric smokehouse and I have been wearing it out. I've made some standing rib roasts, a few briskets, and a few dozen racks of pork ribs. Obviously, my wife and I love the ribs and so do our neighbors and friends that have been over. If any of you are into smoking ribs yourself, here is our rib recipe, which I think is hard to beat. We use a dry rub of equal parts brown sugar, paprika, kosher salt and ground black pepper and rub the ribs down the night before. When it's time to cook, we smoke the ribs for two hours at about 250 F. I then take the ribs and wrap them in foil and add some watered down BBQ. Throw them back into the smoker for another 2 hours, but no more wood is needed since the smoke can't get to the meat. Pull them out and let them rest a bit in the foil and then dig in.

I can't think of a famous or INFAMOUS Blues band that hasn't played and chowed down at Stubbs. Insanely good food and music! Guitarist

We can all agree on one thing though. Those people that do not eat meat are missing out on the best thing ever!

Having lived in Vegas for the last 7 years and recently moved from, I can confidently say, WHAT A SHITHOLE. It's basically just a big valley with trash blowing around it; both literally and white. Highest crime rate in the nation, people are dishonest, the traffic is like an endurance trail trying to get from one place to another and not get hit....I could go on and on. It's a nice place to visit, but to live? Don't say I didn't warn you.
