Works are generally translated because of demand. My guess is that there was no English demand for the Geralt books prior to the publication of the game.
You would be wrong. The book deals have already been done (for the first three books in the trilogy) in advance. So there is no justifiable reason for the wait. The company I work for does publishing and distribution (among other things) in my country and these books sell like hotcakes. No one has any idea why Gollancz is releasing these books so far apart, least of all the people at Gollancz. I think the translation would be at least part of the reason.
