And then there's FO3 which requires other user made fixes just to stop it from crashing, or the HUGE PS3 issue that basically borked people's Skyrim saves if they simply played for too long.
The fact that they're large open worlds doesn't excuse this, AT ALL. If you're going to do something, then do it right. Get a bigger development team, spend some more on QA. Bethesda can surely afford it.

There`s much more "invalid" than valid criticism: examples in your post
Skyrim and Oblivion have big fan made patches, however they are not really fixing major issues but mostly minor/tiny ones (with some specific exceptions). Stuff you`d never find out about and that other games have in spades too but there`s no way to fix them because engine is not flexible. I played 50+ hours of Oblivion on 360 and never had any problems, and that just with an early Bsoft patches. Also 100+ hours in FO3, just Bsoft patches, no crashes whatsoever. It`s a myth. People tend to overload the game with mods, mess with the inis, then go crying that the game`s broken.
And that old "ugly faces" trope...well, acquired taste, but bear in mind they were procedural...I much prefer that than the same face on all shopkeepers for example.
Sure, some things were VERY wrong: that PS3 performance was inexcusable. Also leveling in Oblivion: huge design flaw - though leveling in open world games is always a pain.
Anyway, my point was about comparing them with other devs: last Witcher couldn`t even get its movement right, yet everybody glossed over it and other issues like downgrade and performance.
Like i said, nobody else is doing this kind of true open world experience so yes, they are allowed some slack. There will NEVER be a game of this scope released bug-free...it`s just impossible.
