A desktop OS serves a very different purpose from a portable convenience toy. I don't keep important files on my smartphone. Win10 EULA allows Microsoft (aka NSA) to take any of your files at will.
This means they can steal your intellectual property, or even flag you as a danger to the regime if, say, you develop an algorithm which just happens to decrypt government protocols or breach the same kind of systems the government uses. Even if you do it as a security researcher.
The predictable retort "if you got nothing to hide, you got nothing to be afraid of" is dangerous on too many levels which are far better explained everywhere else on the Internet. It is what allows totalitarian oppression to roam free. We all have things in our lives which fall into the gray zone of the law, or simply things we don't want everyone to see.
Win10 can also uninstall software Microsoft doesn't like. And unlike smartphones, it actually has a keylogger.

Even if we discard the possiblity of maliciousness from Microsoft (which would be incredibly naive)... do you like the idea of your bank passwords or other sensitive information being flung around the Internet using some unknown encryption protocol? Do you even want to gamble with that?
Do you want to trust the OS, which allows you to "disable" the spying features, but then continues to send your information to its maker regardless?
An OS which treats you like a moron who doesn't know what's good for him, and whose choices don't matter?
The answer, of course, depends on how much you match their intended demographic of ignorant proles.
