I don't consider driving around in circles a whole lot of fun, but how about something like Baja? Rugged cars driving across rough desert, lots of hazards to watch out for, ever-changing conditions (having to consider everything from overwhelming heat to cold rain and mud)...now that's interesting racing. Not this 'Hey, let's drive around in a circle 500 times while expending thousands of dollars worth of fuel and high-end racing gear! Whee!'; I don't even like the games. I'd take Baja over Indy/NASCAR any day.

Personally, I'm going to get the warezed version as soon as it's out. Why? I live in Hong Kong. The local distributor, Deltamac, says they won't have it until May, and I can't afford an extra $20-$30 to have it shipped here from Amazon. But I hate not getting games as soon as they're released, because there isn't really a feeling of exploration; by May, GameFaqs and every forum related to UII will have 99% of the secrets listed, so I'd have no chance to contribute to the community and community knowledge. And you wonder why the rest of the world dislikes America so much...

Very, very, very few games are non-linear. Some (like Deus Ex) have story trees, but you do all the same things, then you have a choice, then you get back onto the track. Most of the time, non-linearity in games doesn't work very well, because the player will feel lost/get killed, and the story won't play out properly. Really, non-linearity is overrated, but story trees are underused.
