Thanks for the happy birthday wishes for Hudson the wonder dog. I plan on firing up the man-stove today, so I'll make her and the Gunnar-man something special for the occasion. I've also got some spare ribs to make, which is daunting, because the first time I tried to make ribs it was spare ribs, and they were awful. Since then I have had lots of success both grilling and smoking the far more forgiving loin ribs, so I have worked my nerve up to trying these again. I have some baby backs to do as well, which has actually helped make this scarier, because when I Googled "baby back versus spare rib cooking time" one of the links I turned up said there is an old saying among pitmasters is that the way to cook perfect spare ribs is to pit them on at the same time as a rack of baby backs, and when the baby backs are completely dried out, the spare ribs will be perfect. As I say, a little daunting. Wish me luck!
