Yeah exactly, it's a thinking game, not a grinding game. Most people only grind if they want the Platinum trophy or a specific crafted weapon that requires a few ore that they are missing. I found that most of my deaths were due to lack of flexability in my approach to combat. I wanted my character to do a specific thing and wasn't changing weapons, tactics and etc. Once I started noticing that the game is built to punish you for doing so, it became much easier.

Replay what? You just need to do other worlds, period. You don't need to run 2-1 twenty times, you just need to run it once. You are going to have to run every level once to beat the game, assuming you want to. Replaying isn't part of the equation yet is my point.
If you had the same difficulties, then why are you telling me I'm wrong in my experiences? It's really simple. The game does not have an intuitive progression. You cannot progress through one world, defeat the Demon, then move onto the next. You have to gain souls by replaying the worlds (the grind) and going back to through each world again to defeat the Demons after you've leveled up.
I think we're having a simple communication problem here. The game has been beaten by people at soul level 1 who never leveled up at all. You do not need to "grind" to kill the Tower Knight in world 1-2. It can certainly help to obtain other weapons and armor as well have more HP to have a higher room for error though. You do not need to continually replay worlds to beat bosses though. If you want to play in order of the archstones in the game then yes you will need to grind. If you don't follow that progression then the game will be more enjoyable and you will have an easier time plus have the added bonus of not needing to replay or grind. You will obtain souls naturally just by doing other worlds once. Playing all of the worlds just once brings you to approximately soul level 80-90 for the record and most people are capable of defeating everything far before then. The developers stated NG+ is aimed at players who beat everything and are around SL75+ so again, no need to grind.
Your level is nowhere near as important as your equipment and tactics.
