I live in Imola, 25 km from Bologna, and here we just call it ragł not ragu bolognese simply because despite the existence of an official recipie every family has it's own one.
For example in mine i don't use pancetta, too much fat (pancetta literally is "small belly"), i use instead minced pork meat mixed with minced beef meat.
Also tomato sauce is very important but not as a long, very long, cooking time; mine is about 3 hours.
