Gotta have Doom and Quake in there IMHO. Doom was the first game I saw that made me realise games could be more than 15 minute time wasters. Quake was the first game that made me realise that I really, really loved gaming.

I'd also put in FIFA, Football Manager, Simcity 4 (just pips 2000), Delta Force and Civilization 4. Just subjective of course, especially Delta Force which doesn't seem to be particularly highly regarded.
