Prince of Persia is about one person against insurmountable odds. They gave the role to an actor they believe will be able to play the part well, has a large screen pressense, and draw a lot of ticket sells. I don't doubt someone from Bollywood would be able to play the part well, and have a screen pressense, but there's the issue of drawing in ticket sells. Names pull in crowds. A film starring Jake Gyllenhaal is going to sell more tickets for an American audience the same as a film starring Naveen Andrews would sell more tickets for an Indian audience.
